How the Challenge Works
- Cook one meal per day for 7 days.

Day 1: Air Fryer Lemon-Garlic Chicken & Veggies
Servings: 4 | Protein: 32g | Prep: 10 mins | Cook: 20 mins | Cost: $4.00/serving
- 1.5 lbs chicken thighs
- 2 cups broccoli florets
- 1 bell pepper, sliced
- 3 tbsp olive oil
- 3 garlic cloves, minced
- 1 lemon, juiced and zested
- Salt, pepper, thyme
Instructions:
Toss chicken and veggies with oil, garlic, lemon, and seasonings. Air fry at 375°F for 18–20 mins, shaking halfway. Serve with rice or quinoa.
Day 2: Instant Pot Red Lentil Dahl
Servings: 4 | Protein: 18g | Prep: 5 mins | Cook: 20 mins | Cost: $2.80/serving
- 1 cup red lentils
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tbsp ginger, grated
- 1 can coconut milk
- 1 tsp turmeric
- 1 tsp cumin
- 2 cups vegetable broth
Instructions:
Sauté onion, garlic, and ginger 3 mins. Add all ingredients. Seal → Manual 10 mins → Quick release. Stir and serve over fluffy rice.
Day 3: Stockpot Turkey & Barley Soup
Servings: 4 | Protein: 26g | Prep: 10 mins | Cook: 25 mins | Cost: $3.20/serving
- 1 lb ground turkey
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- ½ cup pearl barley
- 4 cups chicken broth
- 1 tsp thyme
- Salt and pepper
Instructions:
Brown turkey with onion. Add veggies, barley, broth, and herbs. Simmer 20–25 mins until barley is tender. Serve with crusty bread.
Day 4: Air Fryer Turkey Stuffed Peppers

- 4 bell peppers, tops cut off, seeds removed
- 1 lb ground turkey
- 1 cup cooked rice
- 1 cup marinara sauce
- 1 tsp Italian seasoning
- 1 cup shredded mozzarella
Instructions:
Brown turkey in skillet. Mix with rice, sauce, and seasoning. Stuff peppers, top with cheese. Air fry at 375°F for 20–25 mins until peppers are tender.
Day 5: Instant Pot Quinoa & Black Beans
Servings: 4 | Protein: 16g | Prep: 5 mins | Cook: 20 mins | Cost: $2.90/serving
- 1 cup quinoa
- 1 can black beans
- 1 cup corn
- 2 cups vegetable broth
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper
Instructions:
Add all ingredients to Instant Pot. Seal → Manual 10 mins → Quick release. Fluff and serve with avocado and lime.
Day 6: Air Fryer Veggie Pizza Bites
Servings: 4 | Protein: 14g | Prep: 10 mins | Cook: 12 mins | Cost: $2.40/serving
- 4 slices garlic bread
- ½ cup marinara sauce
- 1 cup shredded mozzarella
- 1 tbsp olive oil
- Chopped veggies (bell pepper, mushroom, onion)
Instructions:
Top bread with sauce, cheese, and veggies. Drizzle with oil. Air fry at 375°F for 10–12 mins. Serve warm.
Day 7: Stockpot New Year Chili
Servings: 4 | Protein: 18g | Prep: 10 mins | Cook: 25 mins | Cost: $3.00/serving
- 1 lb plant-based ground
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 can diced tomatoes
- 1 can kidney beans
- 1 tbsp chili powder
- 1 tsp cumin
- 1 cup vegetable broth
Instructions:
Sauté onion and pepper 3 mins. Add plant-based ground and cook 5 mins. Add remaining ingredients. Simmer 20 mins. Serve with Greek yogurt or avocado.
