  • 1 lb ground turkey
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) kidney beans, rinsed
  • 1 can (15 oz) diced tomatoes
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 2 cups chicken broth
  1. Set Instant Pot to Sauté and brown turkey with onion and pepper.
  2. Add remaining ingredients and stir to combine.
  3. Seal and cook on High Pressure for 15 minutes.
  4. Natural release for 5 minutes, then quick release remaining pressure.
  5. Serve with optional toppings like shredded cheese or Greek yogurt.

Day 2: Turkey Breast with Herb Gravy

  • 2 lb boneless turkey breast
  • 1 cup chicken broth

  • 2 tbsp cornstarch
  • 2 tbsp water
  1. Place turkey breast in Instant Pot with broth, onion, garlic, and herbs.

  • 1 lb turkey thigh, cubed

  1. Combine all ingredients in Instant Pot.
