1. Turkey & Rice Soup

  • 1 lb ground turkey
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 6 cups chicken or turkey broth
  • 1 cup uncooked rice (white or brown)
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt & pepper to taste
  1. Heat a large stockpot over medium heat. Add ground turkey and cook until browned (5–6 minutes).
  2. Add onion, carrots, and celery. Sauté for 4–5 minutes until softened.
  3. Stir in broth, rice, thyme, and bay leaf. Bring to a boil.
  4. Reduce heat to low, cover, and let simmer:
    • White rice → 20 minutes
    • Brown rice → 35–40 minutes
  5. Stir occasionally and add more broth or water if needed.
  6. Remove bay leaf, season with salt & pepper, and serve warm.

2. Creamy Red Lentil Dal

  • 1 cup red lentils
  • 1 onion, garlic, cumin, turmeric
  • 3 cups broth
  • ½ can coconut milk (optional)

  • 1 cup pinto beans
