One of my most-requested recipes — simple, nourishing, and always a hit.
Ingredients:
- 1 lb chicken breast or thighs
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 garlic cloves, minced
- 6 cups chicken broth
- 1 tsp thyme, 1 bay leaf
- Salt & pepper to taste
- Optional: pasta or rice
Method:
- Add everything to your stockpot. Simmer 45–60 mins.
- Remove chicken, shred, return to pot.
- Adjust seasoning. Serve with crusty bread.
